Paramount Launches Autumn Winter Range into Foodservice
Paramount 21 which specialises in frozen, value added vegetarian and seafood products, has launched a new trend lead range into foodservice.

'The trend for sharing platters and all day grazing is here to stay as customers move towards a more casual dining experience. Our Chefs have developed a new range of bite sized eats which can be presented as tapas, a starter or for inclusion in a sharing platter. We have also recognised the demand for ethnic cuisines plus the growing demand for sustainable products. All of our products have a fast freezer to table time which we feel is vital in order for our clients to deliver great service.'
Small yet perfectly formed Lemon & Cracked Black Pepper Breaded Scallops are juicy, sweet scallops simply coated in a crispy crumb, seasoned with cracked pepper with a hint of lemon. Seeded (MSC Accredited) Mackerel Bites have been developed to meet the growing demand for sustainable produce. This sustainable British fish is in plentiful supply off our shores and is firmly back on the menu at most foodie establishments. The mackerel sourced has been approved by The Marine Stewardship Council who support and reward sustainable fishing practices. The juicy tender mackerel fillets are sliced and coated in a new seeded coating; containing poppy, quinoa and golden linseeds. Perfect partnered with horseradish sauce!
Paramount has combined the demand for sustainable and bite sized with their Salt & Vinegar MSC Hake Bites. Hake is a great alternative to Cod and Haddock as it has a mild, slightly sweet taste with a delicious flaky yet firm texture. The golden crispy breadcrumb has been infused with salt and vinegar giving you the fresh taste and smell of the seaside.
The British palete has become more sophisticated as Indian, South American and Asian foods become part of the norm at the family dining table. Mexican & South American cuisine is one of the fastest growing cuisines, third only to Indian and Chinese, clearly demonstrating that the UK has a real appetite for ethnic cuisine. Our Chefs have developed a 26g Mini Mexican Fishcake packed with fresh vibrant ingredients including King Prawns and sustainably sourced Hake. 'We haven’t developed a Tex Mex product but an authentic, little cake reflecting the true spirit of Mexico - vibrant, fresh and spicy.’
The 57g Paella Fishcake is made with an authentic mix of calamari, prawns, chorizo sausage. peppers and rice encased in a light crispy batter infused with turmeric and parsley. The attractive and ‘morish’ seafood cake goes perfectly with a fresh pea shoot salad and some crispy sweet potato fries. The 70g Caribbean inspired Spiced Fish Pattie is made using a mixture of Cornish Whiting, Haddock, Spring Onions, herbs and spices encased in a rustic coconut crumb. Serve with BBQ’ed corn and a zesty salad or in a flat bread or pitta for the ‘on the go’ lunch market.
Other additions to the new Autumn Winter range include a Veggie Paella Base Mix, Battered Cod Goujons and Breaded Dill Pickle Fries.
